Caramello-Banana Porridge

This cheeky little breakfast is so good it feels obscene.

Imagine this: gooey banana, mixed with nature’s caramel, a hint of coconut, and the warming comfort of porridge.

P.S. It’s good for you.

– 1/2 cup rolled oats

– 1 chopped banana

– 4 medjool dates chopped

– 1/2 cup coconut milk (light or fatty, it’s up to you)

– 1/2 cup water (and add more if it gets too thick during cooking)

– milk to your liking once cooked (cow, goat, rice, soy, coconut, almond, whatever!)

How to get this shit in your bowl:

Put the oats, banana, medjool dates, coconut milk and water in a saucepan over med-high heat until it starts bubbling, then turn the heat down looooooooow and let that baby simmer for five to ten minutes, depending how you like it. Pop into a bowl and then add milk of your choice to get the consistency that gets you going. Then enjoy the hell out of that healthy, delicious breakfast.

Thank me later,

Shannon x

I’ve just stumbled upon you and thank fuck!
I’m coeliac, as in diagnosed and verified by medical science, not a homeopath life coach.
Is there something decent I can sub for the oats or just give up on porridgey goodness in my life?

Hey Elise! Welcome to my kitchen 🙂 Haha, your summary of your diagnosis made me giggle.
Hmmmmn, I would say attempt an oat-free porridge out of brown rice or quinoa, but obviously these take a bit longer than ol’ oats to cook (or try quinoa flakes for a speedier option).

Hi Shannon, just stumbled across your blog on Facebook and a) you’re awesome but I think you get that a lot, and b) this porridge looks frigging amazing and I’m pretty sure it’s going to be my new staple as soon as I get my hands on some coconut milk. Oh, and c)- have you seen Deadwood? Something tells me you’d like it…. 🙂

What’s it like made the night before and popped in the fridge? My adorable little 5 month old midget arsehole dictator doesn’t think breakfast is important for me so wouldn’t mind making it the night before if it’ll keep?

Sorry for the painfully slow reply! I imagine it may congeal somewhat, so you would need to add a bit more milk in the morning to moisten her up.
